I felt that was a little unfair. Ones couldn't possibly know the subtle taste of fish from another persons place of origin. There is no way the difference in quality would have been that massive since he chose quality fish from a similar environment. I wouldn't count that as a loss, since its judging based on nostalgic preference rather than skill and quality as he was unable to give measurable reason why the it was better or worse that could also be experienced by another person, but thats just my opinion.
Well Yamaoka kind of defeated Yuuzan in that ep with this same technique when he took Kyogoku to the small restaurant and fed him just rice, miso and fish which was from an area familiar to kyogoku. Yes, nostalgia does play a huge part in how ppl percieve taste of food. For example-my gramps (deceased) used to make good food and I can't taste it anymore even if I want to. If someone from my family makes a dish which is close to his type of cooking it's automatically better than what I cook or eat outside imo.
